Banana bread

Banana Bread

This yummy banana bread is a sure treat your kids will love. My daughter packs this delicious bread in her lunch with a little butter, and then takes a few extra slices because her friends like to taste test. By the time they're done, she has nothing left.

I leave the nuts out because, of course, my daughter doesn't like nuts but if you don't have that finicky problem, by all means, add the nuts and you have banana nut bread!

-1/2 cup shortening or butter
-1 cup sugar
-3 medium bananas (really ripe bananas are best and this is a great way to use them up)
-2 cups flour
-2 tablespoons milk
-1 teaspoon baking soda
-1/2 teaspoon salt
-2 eggs, beaten
-1 teaspoon baking powder
-1/4 cup walnuts (optional)

Mash the bananas in large mixing bowl. Add the remaining ingredients and beat until well mixed (about two minutes). Pour into greased bread pan and bake at 350 degrees for one hour.

You can test to see if the loaf is done by gently pressing your finger on the top. If the dent stays after you take your finger away, bake another 15 minutes. This recipe makes one loaf of bread.

Just a note on whether you should use butter or shortening: I've used both butter and shortening, and I hate to say it, but the shortening (Crisco Brand) seems to tastes better.
