Chicken and Rice

Chicken and Rice

Chicken and rice is a simple one pot meal that you can have on the table in under an hour with virtually no prep time. Most of us stock chicken breast in the freezer and minute rice and a cream soup in our pantry so this is one recipe that will always help you out in a pinch!

-1 1/4 cup uncooked rice
-2 chicken breasts
-1 can cream of chicken soup or cream of mushroom works well too
-water

Pour rice in the bottom of an 8x8 glass baking dish. Place chicken on top. In a bowl, empty contents of soup can and slowly stir in 1 can of water. Pour soup over rice and chicken. Cover with tin foil and place in the oven at 350 degrees. Bake for 1 hour. This recipe serves two, but it can be easily double to serve company.
