Chicken salad recipe

Creamy Chicken Salad

This creamy chicken salad tastes just like it came from your favorite deli. It can be spread on crackers, bread or garlic toast and it makes a great salad on a bed of lettuce.

-1 13 ounce can of chicken breast meat or the equivalent in leftover baked or rotisserie chicken
-2 stalks of celery, chopped (about 1/2 cup)
-3 green onions, chopped (about 1/4 cup)
-1 tablespoon fresh or frozen parsley
-1/3 cup mayonnaise
-2 tablespoons sour cream
-1/4 teaspoon salt and a dash of pepper

Drain the canned chicken and chop into bite sized pieces. Add celery and onions (use the green portion of the onion to make your 1/4 cup). Mix in the rest of the ingredients and chill for about an hour before serving.
