Cucumbers and Cream

Cucumbers and Cream

Cucumbers and cream are a summertime staple at our house, although I still have to keep a few of the sliced cukes out for my daughter.

-2 english cucumbers (these are the really long ones, usually wrapped individually) or 3 of the supermarket variety
-1 Tablespoon coarse salt (I use canning salt)
-1/4 cup sugar
-1/4 cup vinegar
-3/4 cup half and half or whipping cream
-pepper to suit your taste
-1/2 of a small onion sliced thinly (I do not add this but I've seen a lot of people do so I thought I'd add it as an option if you are an onion lover)

Peel the cucumbers and slice into 1/8 inch slices--I use my salad shooter but you can do it by hand. Add salt to the sliced cukes and let them sit for at least 15 minutes; 30 is better. They soak up the salt and release water. In a separate bowl, mix up the rest of the ingredients. Drain the water off the cucumbers and add the cream mixture. Mix well and serve. This salad is great served over boiled potatoes...I know it sounds weird but it is a great taste sensation. You can also use this same dressing and recipe for bib or leaf lettuce and and again, great over boiled potatoes.
