Hot Bacon Dressing over mixed Greens

Hot Bacon Dressing for Salad

This hot bacon dressing isn't the thickened, often lumpy version you get in restaurants, it's more of a sweet-sour vinaigrette.

-1/2 pound sliced bacon cut into 1/2" pieces
-1/2 cup vinegar
-1/2 cup sugar

In a large skillet, fry up your bacon. When it is completely cooked, add the sugar and mix into the bacon and the grease. Then slowly add the vinegar. It will sizzle, so be careful. Mix well and pour over spinach or mixed green salad. This recipe is my mom's and it's very basic. My dad likes to throw in fresh herbs like a little parsley or basil to put a different twist on it. It's another option for you. I like to cut down on the sugar--I reduce it by about 1/3 and sometimes I use Splenda. If I use Splenda, I still use 1/3 less sugar than the recipe calls for, and it does have a bit of an aftertaste that I don't get when I use sugar, but I really love this dressing and if I can take away some of the sugar, I at least feel like I'm being more healthy.
