Italian Salad Recipe

Italian Salad

This delicious Italian Salad is full of vegetables and easy to throw together since you make it with your favorite bottled salad dressing. I typically make it for outdoor picnics, but it is a great addition to any meal. Since the vegies are always in season at the grocery store, it's one cold salad you can always make.

-2 stalks broccoli flowerettes, cleaned and cut in bite size pieces
-1/2 head cauliflower, cleaned and cut in bite size pieces
-1 red, yellow, or orange pepper, cleaned and cut into thin bite size strips
-6 ounce jar olives, green or black, sliced
-6 ounces pepperoni, cut in half
-5 string cheese, cut into 1/4 inch slices
-1/4 small onion, finely sliced
-8 ounces bottled Italian dressing (I use Wish Bone brand)

Mix all the ingredients into a large decorative bowl. Cover with plastic wrap and chill for at least an hour before serving.

If you prefer Italian Pasta Salad, you can add a few ounces of cooked, spiral noodles (I like the multi-colored ones). You will either have to add more Italian dressing, or omit a couple of the broccoli and cauliflower bites.
