Jelly Roll



Jelly rolls are easy desserts and one my Gram would usually have on hand, just in case company showed up and she needed an easy dessert. Of course, if company didn't show up, we got to eat it all, which wasn't such a bad deal either.

-4 eggs
-1 cup sugar
-1 cup flour
-1/2 teaspoon baking soda
-1 teaspoon cream of tartar
-1/8 teaspoon salt
-your favorite flavor of jelly
In a large mixing bowl, sift the flour, baking soda and cream of tartar. If you're like me and don't have a sifter, I use a wire strainer and push it through with a spoon. It does the same job.

Add eggs, salt and sugar and mix well. Divide evenly between two jelly roll pans and spread out. Bake at 350 degrees for approximately 20-25 minutes. Insert a toothpick; if it comes out clean, it's done, if not, bake in 5 minute increments until it is a light gold color.

Remove from the oven and flip pan onto your counter top, so cake falls out. Spread with jelly and roll immediately. Because it is still warm, it will not crack when you're rolling it. Gram's recipe doesn't indicate how much jelly she used but I'm of the mindset that a thick layer is really good since some of it seeps into the cake. Once it cools, cut it into slices and serve with a side of vanilla ice cream.
