Roast Turkey Stuffing

Roast Turkey Stuffing

Roast turkey stuffing is a must have for your roast turkey Thanksgiving feast!

-4 tablespoons butter
-2 stalks of celery
-1 medium onion
-heart, liver & giblet of turkey (throw away the neck)
-2 teaspoons salt
-2 good shakes of pepper (my best guess here is about an 1/8 of a teaspoon, grandma really did cook like this)
-20 ounce bag of stuffing mix
-2 teaspoons rubbed sage
-1 tablespoon parsley
-1/2 teaspoon poultry seasoning
-1 cup milk
-3 cups water (just enough to make it soft)

Grind up the celery, onion, heart, liver and giblet of turkey in your meat grinder (if you still have big chunks, run it through again-nothing is worse than getting yucky chunks of liver or giblet in the dressing, but you need it to add flavor--and again, don't use the neck, it tends to be too tough). In a fry pan, melt butter and add the ground ingredients, salt and pepper and saute until tender. In a separate bowl, mix the remaining ingredients and the sauteed ingredients. Then stuff your bird.
