Spinach Dip

This spinach dip recipe came from my grandma on my dad's side. She was a very understated chef, in that, you wouldn't label her as a great cook, but every holiday she would have a new recipe that was always delicious and you will find several of her recipes within my site. Even the young kids in the family like this dip--provided we don't tell them it contains spinach....

-10 ounce package frozen spinach, thawed and drained
-1/2 cup parsley
-1/2 cup onion, finely chopped
-3/4 teaspoon salt
-3/4 teaspoon pepper
-2 cups mayonnaise (not Miracle Whip)

Mix together and chill. Great served with Trisquit brand crackers (my favorite), Wheat Thin brand crackers or Bagels.
