Sweet Sour Coleslaw

This sweet sour coleslaw recipe is something my Grandma always made during the summer. When I was a kid, I didn't like the green pepper, carrot and onion, so she made it plain for me and added the rest of the ingredients for everyone else. Now, I like it both ways, but this gives you an option if you're kids are fussy too. You can make this recipe with green or red cabbage--they're both good.

-1 head cabbage, shredded
-3/4 cup vinegar
-1/2 cup salad oil or olive oil
-1 1/2 cups sugar
-1 teaspoon salt

-Optional Ingredients:

-1 green pepper, shredded
-1 small onion, finely sliced
-2 carrots, shredded

Place your shredded cabbage and/or your optional ingredients in a large bowl. Mix the remaining ingredients in a kettle and bring to a boil. Boil for 1 minute, then pour over the cabbage immediately. You can store this salad in the refrigerator for up to 5 weeks.
