Zucchini & Baby Corns

Zucchini & Baby Corn Stir Fry

Zucchini & Baby Corn Stir Fry is just an easy recipe to throw together that most kids will eat because it has corn and bacon. It goes with just about any type of meat, like pork, beef or chicken and the items are usually items you keep in the frig or the cupboard.

-1 can baby corns
-1 medium size zucchini
-5 strips of bacon
-1 teaspoon dried parsley

In a large fry pan, on medium to high heat, fry the bacon until it is crispy. Remove the bacon from the pan, and leave about 2 tablespoons of the bacon drippings in the pan. On a medium heat, add the baby corns and cook them for about 6-8 minutes, stirring frequently so they don't burn. Add the zucchini and parsley. Fry just long enough for the zucchini to get tender but not mushy. This doesn't take long, only another 2-4 minutes. Remove to a serving dish and crumble the bacon on top. Best to mix the bacon into the vegetables or your children will probably eat the bacon off and leave the rest.
