Cheesy Hashbrowns

Cheesy Hashbrowns

Talk about comfort food! Cheesy Hashbrowns are full of gooey cheese and incredibly creamy, with a cornflake topping that gives it a little crunch. They are so easy to make and very portable, so they are the perfect dish to bring to family events and pot luck dinners.

-2 pound bag frozen hashbrowns
-2/3 cup and 1/4 cup melted butter (separate)
-1/2 cup onion, chopped
-1 16 ounce container sour cream
-10 ounces cheddar cheese, shredded
-1 can cream of chicken soup
-2 cups cornflakes, crushed

Mix all the ingredients except the cornflakes and 1/4 cup of butter together in a pan and top with cornflakes and remaining butter. Bake at 350 degrees for 1 hour.
