crab dip crab spread

Crab Dip

One year, one of my girlfriends brought this crab dip recipe to our annual rummage sale. Every year, we get together and have a huge rummage sale (we like to shop, this justifies it). Of course we have to have something to do during those rare slow periods when we're not selling or cleaning up after people, so we eat. We often try out new recipes on each other and after trying it, I needed to have this one because it is way better than the crab salad you get in the deli. You can use leftover crab legs if you like to go through the work of cracking them, or you can be lazy (I fall into this category and so does my friend) and make it with sea legs.

-8 crab legs, shells removed and chopped up (or 8 sea legs-12 ounces)
-1 small onion, finely chopped-about 4 heaping tablespoons
-8 ounces cream cheese, softened
-2 tablespoons mayonnaise
-1 tablespoon dill weed
-1 tablespoon parsley.

In a large bowl, mix it all together and chill for about an hour. It's so easy. This dip is great on top of a bed of lettuce as crab salad or on crackers or stalks of celery.
