Tuna Melt Recipe

Tuna Melt Recipe

I make my tuna melts loaded with mozzarella cheese. The ooey gooey cheese is what makes it my comfort food. Plus it's a warm, balanced meal when I'm in a hurry.

-1 5 ounce can of tuna, drained
-3/4 cup chopped celery (about 2 stalks and if it's a little more than 3/4 cup, that is okay
-1/2 cup chopped onion (about 1 small or 1/2 of a large onion)
-1/4 cup salad dressing (I use Miracle Whip brand)
-1 cup (8 ounces) shredded mozzarella cheese
-1/2 teaspoon salt
-dash of pepper
-6 slices of bread

Preheat oven to 350 degrees. Drain your tuna and put in a mixing bowl. Chop up your celery and onion (I peel my celery before chopping-I know you probably lose some nutrients, but the outer layer is stringy and tends to be more bitter and this is comfort food; I want it to be delicious, even if it is healthy.)and add to the tuna. Add in the salad dressing, salt and pepper and mix well. Place your six slices of bread on a cookie sheet and evenly distribute your tuna mixture onto the bread. Top with mozzarella cheese and pop it in the oven for approximately 15 minutes. It is done when it is a little browned on top and all the cheese is melted. These are a great hot lunch when you're brown bagging it to work. They take about a minute in the microwave to be warmed up, and you have a yummy and nutritious lunch.
