This coconut caramel glaze gets added to an ordinary box cake before you bake it, and it will make everyone think you slaved for hours baking a homemade, from scratch cake.
-1/3 cup flour, sifted (use a wire mesh strainer if you don't have a sifter)
-1/3 cup brown sugar, packed
-3 tablespoons butter
-1/2 cup coconut
-1 - 1/2 teaspoons lemon juice
In a large mixing bowl, combine the flour and brown sugar. Mash in the butter and mix well. Mix in the coconut, and then mix in the lemon juice. Spread this mixture on top of your box cake batter (the one you prepared before starting this recipe) and follow the baking directions on the box. My mom likes this recipe on white cake, but I think it's better on a red velvet cake. Have fun experimenting on different flavors. This would probably be great on chocolate cake, too.
