Vegetable Recipes




Okay, so I'm not a vegie lover, nor is my child, and truthfully, I found it hard to make vegetable recipes a category on a 'comfort food' website. You would think that, growing up on a farm, I would have loved vegies from the start, like my mom did. No such luck. By the time I was 10, I liked tomatoes and cucumbers, but only fresh out of the garden, peas--but only in the pod, and corn. I also tolerated lettuce. My daughter is worse yet--forget the tomatoes and peas.

Here's the thing, vegetables are good for you. We all know it; everyone tells us. So, over the years, I've learned to like a much bigger variety. I've learned that I prefer my vegies raw or lightly steamed rather than cooked soft, and I've also learned to get creative. I've tested and tweaked those vegetables into things that taste good to me. So, if you're like me and you need help in the vegie arena, here are my favorites....as for my daughter, I've learned that we're just going to have to argue about eating them until she grows up and has a child of her own. Yes, I'm waiting for the day....

Beau Monde Vegie Dip with Fresh Raw Vegetables

Chinese Coleslaw
Cold Vegie Pizza
Crunchy Green Pea Salad
Cucumbers and Cream (Can also be used for bib or leaf lettuce)
Curried Eggs with Chinese Vegetables
Mediterranean Olive Dip (for dipping vegetables)
Sauerkraut
Spaghetti Squash
Spinach Dip
Sweet Potatoes with Marshmallows
Sweet Sour Coleslaw
