Grilled Cheese with onion & mustard

Grilled Cheese Onion Sandwiches



These zippy grilled cheese onion sandwiches are my dad's favorite. I've never heard anyone doing this combination for a grilled cheese, but it is definitely yummy!

-4 slices bread (white, sourdough, rye-they're all good with this recipe)
-2 tablespoons soft (not melted, just room temperature) butter
-3 or 4 ounces mozzarella or mild cheddar cheese, grated
-thinly sliced onion
-2 tablespoons of brown, horseradish mustard

Heat a large nonstick skillet over medium heat. While the pan heats up, butter one side of two of the slices of bread, putting in the pan as you butter them. Spread mustard on each of the two sides in the pan facing you. Pile on lots of cheese on each slice of bread and top with a single layer of thinly sliced onion. Butter the last two slices of bread on one side and spread mustard on the opposite side. Place them butter side out, on top of the onion. Cook until the bottom of your sandwiches are golden brown and the cheese has begun to melt. This takes approximately 2 minutes or so. Turn the sandwiches over with a spatula and press down to flatten them slightly, and so the cheese melts into the onions. Cook the sandwiches until the other side becomes golden brown. Make sure the cheese is completely melted and serve immediately. My favorite combination is the rye and mozzarella cheese, but it's fun to experiment with different types. My daughter is strictly a "yellow cheese" (she doesn't differentiate yet) and white bread lover, but some day.....
